5 Easy-Fix Dishes to Prepare During the Covid-19 Lockdown

Is it just us who feel hungrier during the covid-19 lockdown or do you feel the same as well? The Coronavirus infection has spread rapidly around the world and forced every person to stay indoors. In India, a lockdown has been enforced till 14 April, pushing each one of us to get a little more creative in getting things done around the house.

One such task at home is deciding what to cook.  One major downside of the lockdown is the lack of sources to access ingredients or any other groceries. What’s more, if you are anything like us, you too are experiencing an intense craving for junk food. But to make do with basic ingredients that you may have and whip up something yummy, here are 5 simple recipes and easy-fix dishes to make:

 

  • 2-ingredient Pancakes
    Breakfast is an important meal since it fuels you up with energy and prepares you for the rest of the day. We are aware that supplies and groceries are running low in the country and it is crucial to make the most of what you have during home quarantine. Step in, (mini) pancakes made with just two ingredients – 1 ripe banana and 1 egg! What you have to do is mush the banana with a fork then add in the egg. Take a small pan and heat 1 tablespoon of oil or butter. While that heats up, whisk the egg and banana together. Swirl the butter so that covers the entire base of the pan. Take a spoonful of the batter and pour it into the pan to make mini pancakes (for normal pancakes, directly pour in the batter in 2 parts). When you see bubbles forming on top, carefully flip the pancakes. Give it 1-2 minutes before taking out the pancakes. Serve with maple syrup or honey.

    P.S. – these are dairy free, gluten free and sugar free but in case you want the pancakes to be a fluffier, add a spoon of flour and pour some milk to the batter.

 

  • Whiskey Potatoes
    The covid-19 lockdown has brought out some chefs who have been hiding in the closet! This recipe is for the adults (skip the alcohol if you want to make this for children)! This is really easy to make and doesn’t take more than 20 minutes to be laid down on the table! All you need to do is chop potatoes in the shape of French fries (you can keep the skin). In a pan, bring water up to a boil and add in the potatoes. Let them par-boil for 5-6 minutes. In another pan, heat some oil/butter in a pan. Sauté finally chopped onions and garlic till the onions turn pink. Add 1 spoon of honey and 1/2 spoon of soy sauce (you can add more also if you want). Mix it well before pouring in 30 ml of whiskey (alternative: 30 ml white/red wine). Strain the potatoes and add them to this whiskey sauce. Make sure to completely coat the potatoes in the sauce. Cover the pan and let it cook till the potatoes are soft. Serve hot!

 

  • Khichdi
    Honestly, there is nothing more wholesome and filling than a bowl of khichdi, especially in an Indian household. There are multiple variations of making khichdi but the easiest recipe of making this one-pot wonder of rice and moong dal begins with heating ghee in a pressure cooker. Add 1/2 tsp cumin (jeera) and one sprig of curry leaves (removed from the stalk) and mix well. Mix and add 3/4 tsp ginger paste and a pinch of asafoetida (hing). Once you get the aroma of the ginger getting cooked, add chopped and deseeded tomatoes, carrot cut into cubes, chopped french beans, 1/4 tsp turmeric powder (haldi) and salt as per taste. Saute well for 3-4 minutes. Add in the moong dal and rice that has been washed and strained. Pour 3 cups of water and give everything a mix. Close the pressure cooker and let the dish cook for 3 whistles. Yummy khichdi ready to be served with papad or achaar.

 

  • Stir Fry Veggies with Mashed Potatoes
    When you are unable to come up anything better to cook, take a look at what veggies you have in stock and just make a stir fry! If you consume egg or meat, add those in the mix as well. For flavour, you can add in soy sauce and chilli sauce. To make it more filling, make mashed potatoes too. To make mashed potatoes, first boil the potatoes, peel and mash it really well. Heat butter in a pan and add chopped garlic. Saute for 1-2 minutes and add the mashed potatoes. Slowly, pour in milk and keep mixing till you get the right consistency. Add salt and pepper as per taste. If you want, you can add some grated cheese in the mashed potatoes.

 

  • No-Bake Cookies
    This is super easy and requires just three ingredients – wheat flour, sugar and butter! All you have to do is whisk 250 grams of butter in a bowl till its smooth and then add in 1/2 cup sugar. Once you have mixed those two together, add in 2 cups of wheat flour (1 cup at a time). Combine the three ingredients well and then start dividing the cookie dough into smaller balls and flatten each. Heat a tawa, add a pan on top of it, place butter paper or aluminum foil and place the cookies on it. These generally take about 15 minutes to cook but if you are using aluminum foil, they may get cooked quicker and will have a crispier base.
